Having healthy quick go to meals are a must!  I certainly understand why a family would make a quick stop at a fast food restaurant or any other convenient meal for their family when time is limited.  The value of a home cooked meal is completely understated.  The life skills it teaches our children of preparing food is just one, but also knowing what you are putting in your body and the value that holds could be something I could elaborate on for days.  The purpose of providing 30 minute meals is to provide you with go to meals that are quick and easy when time is limited. Meals that are actually nourishing your body as opposed to possibly damaging them.

This particular meal is great because you can change the veggies to what is available to you or to possibly what you might like to sneak into young bodies ?.  One thing that I should mention about this recipe and any others of mine that involve meat, is knowing the source of your meat.  It took our family a few years to truly navigate through quality local sourcing of meat.  I should add that we live in an area where we have abundant resources for local meat.  High quality ingredients is essential in trying to provide your body with the proper nutrients to thrive.  Meat is unique in that it passes along the quality of what that animal ate as well.  Which can be loaded with nutrients, or be loaded with things that neither the animal or us should ever be consuming.   Bottom line, know your sourcing.

Ground Beef Stir Fry

  • 1 pound of ground beef
  • half a head of cabbage
  • 1-2 carrots
  • 1-2 zucchini
  • 1 rutabaga (optional)
  • 1 onion (optional)
  • 1 tsp basil
  • 1 tsp thyme
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1 tsp pepper
  • 1 tsp sea salt

 

Brown ground beef in large skillet.  Add chopped onions if using.  Add basil, thyme, oregano, garlic powder, pepper, and sea salt.  Once meat is browned start adding grated carrots, grated zucchini, chopped rutabaga, and sliced cabbage.

Cover and let vegetables soften.  This is truly it with this dish.  Vegetables will cook up in about 5 minutes, but could certainly stay warm longer if needed.  I have paired with roasted broccoli,

but this recipe could certainly stand alone.  I usually double for leftovers.  Bottom line is it’s quick, easy, and delicious!  Enjoy!
